When I was in Arkansas visiting Mama Mabel (or daughter
Mabel?), she gave me some fresh squash and tomatoes her neighbor had
grown. So I called cousin Judy and asked
her what to do with it. Cousin Judy told me to sauté onion and squash
in some olive oil. Once it’s soft, pour
in a can of Rotel and add some chopped up kielbasa or similar sausage. Let it all simmer until everything is steamy
hot. Serve over rice. Yummy!
I cooked it up tonight and served it to 3 twelve year old
boys. 2 out of 3 loved it. Plus me.
I ate a lot!
